The Diva That Made Roasted Garlic & Feta Dip
I found this recipe, many years ago, for the Chinese Laundry Cafe’s “Feta And Garlic Pate” online and it had this explanation: “This funky little cafe is a regular hangout for Queen’s university students. Lucky students. This recipe comes from the owner, Ann Marie Rousseau.”
I loved the idea, but I finagled it… a lot. One significant change was increasing the amount and roasting the garlic and adding more scallions and anchovies. The original recipe had butter in it which seemed kind of European so I scratched that. Now it’s got balls—just the way I like it!
I used this to make a Roasted Garlic & Feta cheese balls and rolled it in toasted almonds as part of my International Men With Balls brunch that I held the second time Obama was elected.
Roasted Garlic and Feta Dip
Ingredients
- 8 - 12 cloves of garlic, roasted
- 4 anchovy fillets
- 8 ounces feta cheese
- 8 ounces cream cheese
- 6 ounces sour cream
- 4 scallions, chopped
- freshly ground black pepper to taste
- Tabasco sauce; few drops
Directions
- Combine all ingredients in food processor until very smooth and creamy. Serve with your favorite crackers and/or raw veggies.
