Minty Watermelon Lime Chia Agua Fresca

A sugar-free refreshing summer beverage made from watermelon, lime, mint and chia seeds. I was looking into sugar free beverages that one can have on the Whole 30 food plan. My boyfriend is on it until October 8th.
Ingredients
- 2 pounds watermelon pulp
- 1/3 cup lime juice
- 16 fresh mint leaves
- 2 teaspoon chia seeds
- 1/4 cup water
- Simple syrup (optional)
Directions
- Soak the chia seeds in 1 the water for 15 minutes Pulverize the watermelon with in a blender or nutribullet. Pour the watermelon juice through a fine strainer to remove the pulp.
- Mix in the lime juice and taste. You can add some simple syrup if you want it sweeter, but I found that the watermelon made it sweet enough.
- Pour over ice, garnish with mint sprigs and lime wheels. Drink!
